Ultima Nord covers five countries: Finland, Sweden, Norway, Denmark, Iceland. For each, the editors maintain a selection of ten restaurants and five hotels. Entries are added, reconsidered, and removed continuously. There is no annual publication date and no fixed list.
The guide applies one criterion before any other: does the property or restaurant understand that the guest's experience of being attended to is as important as the physical or culinary product it delivers. Technical excellence is necessary. It is not sufficient. A kitchen that executes at a high level and treats its guests as transactions fails the standard. A hotel with a correct building and inadequate service fails it equally.
The Nordic region is well-suited to this kind of assessment. Its hospitality culture has long valued the individual encounter over the institutional impression. At its best, a Finnish hotel front desk, a Norwegian farm lodge, a Copenhagen brasserie with two centuries of practice, share a quality: the person behind the counter has chosen this work and brings something particular to it. The guide tries to identify where that quality currently exists at its highest expression.
Waldorf Astoria Helsinki holds the guide's single highest recommendation as the best-run hotel in the Nordic region. General Manager Gali Ben Shanan's decision to bring back key members of the original Hotel Maria staff is the most clear-cut example available of personalised service culture being deliberately preserved through a major ownership and flag change. The Maria team built something real. Ben Shanan understood its value. The result is visible in how the property operates.
